Comin’ in just in time for Fourth of July recipe planning with a DELICIOUS recipe you’ll be obsessed with if you like chocolate + marshmallows (so like, everyone, I hope…if not you, your friends will love them–promise!). These are the yummiest, gooey-est, easiest s’mores bars and this recipe is definitely one I’m going to repeatedly be turning to for BBQs, potlucks, girl’s nights, the office, etc.

I made these for our office potluck last week and they were a huge hit! They also taste extra good warm (microwaved for like 10 seconds or fresh out of the oven), and next time they’re totally being served alongside vanilla ice cream. Another thing that’s great about dessert bar recipes like this is that you can adjust the amounts of chocolate or marshmallows and still get the same effect…these were super sweet so if that’s not your thing, feel free to reduce the amount of chocolate chips a bit–there really just has to be enough to create a thin base layer! So many of you wrote back ooohing over these on Instastories, so let me know if you end up making them :)

Easy s'mores bar recipe

Gooey S’mores Bars
Makes approximately 28 servings
Adapted from

– 1 cup butter, softened
– 1 1/4 cups sugar
– 2 eggs
– 2 teaspoons vanilla
– 2 2/3 cups flour
– 1 1/2 cups crushed graham crackers
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 2 cups semi-sweet chocolate chips
– 10oz bag of mini marshmallows

Preheat oven to 350ºF. Grease a 9×13″ pan.

In a large bowl, beat butter and sugar together until well-combined. Add vanilla and egg and beat well. In a second bowl, combine the flour, crushed graham crackers, baking powder, and salt. Add the graham cracker mixture to the butter mixture and beat until blended (note that I used a hand mixer).

Transfer about 3/4 of the dough into the pan and smooth until the entire bottom of the pan is covered. The dough will be gooey so I thought it was easier to spread with my hands than a spoon. Bake for 15 minutes.

After removing the pan from the oven, evenly spread the chocolate chips to cover the baked layer. Do the same with the marshmallows. Take the remaining dough mixture and break it into pieces, sprinkling it over the marshmallows.

Bake for another 15-17 minutes (until top is slightly brown). Remove from oven and cool completely before cutting–otherwise they’ll break apart. If you want this served fresh/hot/warm, grab a spoon and dig in!

    Omg, I love everything s’mores, so this is right up my alley!! They look sooooo good!!! I just made a s’more in the micro last night because we were too tired to make a fire outside. LOL! The lazy gal’s s’more. Have you ever tried the Thomas English Muffins S’more flavor?! It sounds ridic, and it kind of is, but they are sooo good.

      Haha! Sounds like something I’d totally do, too! I haven’t even heard of Thomas making English muffins in that flavor but obviously need to get my hands on them…that could be interesting (in the best way!)
