Recipe: Grilled Spinach, Mushroom and Mozzarella Sandwich

Using my go-to ingredients, spinach, mushrooms, and cheese, I decided to make a quick warm sandwich for lunch the other day. As I normally do, I cooked the spinach and mushrooms in olive oil before adding them to the sandwich. I’ve been working on trying to use up a slab of fresh mozz over the past few days— if it were possible to overdo on the cheese, I definitely would have done it this time. What I probably should have done is cut the cheese into thinner slices and let it melt on each side of the bread before adding in the veggies. It wasn’t really melted by the time the rest of the sandwich was cooked, and I didn’t want to risk burning the bread. In any case, I added some black pepper and a dash of oregano before letting it sit on the stove for a few minutes.

Notice the side of ketchup. Ranch might have been a better call on this one.
